In addition to the Easter candies around this weekend, I decided to bake something special for our guests. Grandpa and the wee ones really enjoyed a dessert I deemed the “perfect marriage.” What is it?
Simple – just bake up my two-ingredient Magic Pumpkin Spice Cake and top it with my Opally Delicious Carmel Icing and what do you get? A perfect marriage of spicy and sweet. A rich and fiber-filled cake that’s yummy with brunch, over coffee, or tucked in with their leftover care packages.
I’m traveling for work and, after today, won’t be blogging ’till the weekend; I wish you all a happy, good week :). -MJ

I’m traveling for work this week, too. Just flew into Guangzhou and sitting in a VIP suite at the hospital I’m lecturing at. Gorgeous and comfortable!

Your travel is much more adventurous than mine – I’m off to a departmental conference in Denver. CO Rocky Mtn high :). Hoping to get in some touring tomorrow after I land and then I’ll be in all day meetings for 3 days – oy! The good part is that I enjoy seeing my colleagues and I love to sneak away after dinner to a bath and my own quiet room … ahh! Safe travels to you my friend!!

It’s really good — you can make the cake into a loaf or muffins and they’re delicious on their own; the icing takes it to a new level. Cheers! MJ

the icing is so good … one tip I did this last time b/c I was impatient and didn’t wait long enough for the milk/butter/sugar too cool before adding the powdered sugar. (lumps) — I used the electric beaters and beat it till it was smooth — even better! Enjoy 🙂 MJ
My mouth is watering MJ:) At the local bakery my hubby orders me a birthday cake that is 3/4 buttercream frosting and 1/4 cake….so I am known as the “Frosting Lady”….I go to town tomorrow to do my weekly grocery shopping and I am making this….the cake too:)
ha – that’s funny!! 🙂 MJ P.S. my personal recommendation is to use butter. Margarine works but butter makes it magical.
Will do as I have found this last year that butter is good in everything….I used to use margarine but now use butter most of the time:)
